Feta Bruschetta
INGREDIENTS:
1 cup Kryssos Crumbled Feta
1 rye baguette, sliced into 1/2-inch thick pieces
1 cup roasted red peppers, sliced
Fresh basil leaves, chopped
2 tablespoons extra-virgin olive oil
1 garlic clove, halved
Salt and black pepper to taste
DIRECTIONS:
Preheat your oven to 375°F (190°C).
Place the rye baguette slices on a baking sheet. Brush each slice lightly with extra-virgin olive oil.
Bake the slices in the preheated oven for about 8-10 minutes or until they are golden brown and crispy. Remove from the oven and let cool slightly.
Rub the top of each toasted slice with the halved garlic clove for added flavor.
Spread a generous amount of crumbled feta cheese on each toasted baguette slice. Top with a few slices of roasted red peppers. Sprinkle with chopped fresh basil leaves.
Drizzle a small amount of extra-virgin olive oil over the assembled bruschetta. Season with salt and black pepper to taste, and serve.
